Robert's Recipes - Jam Drops
Ingredients
- 250gm
Butter
- 200gm
Sugar
- 2 Eggs
- 50gm
Coconut
- 1
Dessertspoon of Honey
- Dash
of Vanilla
- 500gm Self
Raising Flour
Method
Cream butter & sugar really hard (use a mixer), until light & white. Add
eggs, honey & vanilla, one at a time & beat hard until mixed. Add flour &
coconut, & mix well. Roll into big marble-sized balls (not as big as a golf
ball-makes 40). Flatten and make a small well in the middle of each biscuit.
Fill the well with _ tsp of jam. Bake in a fan forced oven at 165 degrees
Celsius for 12 minutes.
