Robert's Recipes - Coconut Rolls

Ingredients

  • 250 grams Butter
  • 400 grams Sugar
  • 2 Eggs
  • 600 grams Self Raising Flower
  • 5 grams Salt
  • 150 grams Coconut

Method

Cream Butter and Sugar. Add the rest of the ingredients. Roll into balls and shake in natural sugar (preferably raw sugar, but don't use Generic Brands of raw sugar as they are too fine and you want it to be coarse). Flatten by hand onto tray. Bake in a fan forced oven at 170 degrees celsius for 14 minutes.
