Robert's Recipes - Rock Cakes

Rock Cakes

Ingredients

250gms butter
250gms sugar
1tsp vanilla
4 eggs
500gms self raising flour
150gms plain flour
200gms currants

Method

Cream butter and sugar on high
Add vanilla and eggs mixing slowly
Add flours on medium speed
Add currants and combine
Pluck small amounts leaving rough and place on a greased baking tray. Flatten with a fork.

Bake at 165 degrees for 14 minutes in a fan forced oven.
